Espresso Fudge Cupcakes with Chocolate Buttercream Frosting Recipe

This cupcake is really easy to make and this is definitely one of my favourite cupcakes. I made Jell-o cookies too beside espresso fudge cupcakes but I will share the recipe for this cupcakes first.

Cupcakes :

  • 1 cup flour
  • 1/2 cup unsweetened cocoa
  • 2 tsp espresso powder
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup butter
  • 1 cup granulated sugar
  • 1 tsp vanilla
  • 1 egg
  • 3/4 cup milk
  • 1/2 cup chocolate chips

Frosting :

  • 1 cup butter
  • 3-4 tsp cocoa powder
  • 1 tsp vanilla
  • 1/2 cup powdered sugar or confectioners sugar

Directions :

Sift flour in a bowl, mix it with cocoa, espresso powder, baking powder, baking soda, and salt. In a separate bowl, cream butter and sugar on high speed until light and fluffy. Reduce speed to low and add the vanilla and egg. Mix well and turn off the mixer. Using a spatula, add milk and flour mixture alternately (I prefer this way so the cupcakes will become soft). Stir in chocolate chips and pour into lined cupcake pan. Bake at 350° for 20 minutes or until toothpick comes out almost clean.

Cream butter and sugar on high speed until creamy. While beating add vanilla and cocoa powder gradually. Spread the frosting on cooled cupcakes with a spatula. top with chocolate chips or coffee bean if you want.

DOCTOR WHO COOKIES [TARDIS & BOW TIE COOKIES]

My mum bought me loads of food colouring, so yesterday I was wondering what should I use all these food colouring for but then my mum said she wants to make cookies like kaastengels and nastar for Eid Day. I decided to make DOCTOR WHO themed cookies for celebrating the 50th anniversary of DOCTOR WHO and because Matt Smith is leaving DW this year too. I know it looks really messy 😄 it was my first time to decorate cookies and I don’t have the tools so I used toothpick and straw lol.

To make this cookie dough is actually very simple, I only used butter, eggs, flour, and baking powder. Since yesterday was the first time I made icing for decorating cookies, I used this recipe for the icing because it has a great review and pretty simple. I didn’t use corn syrup so I tried to substitute it with simple syrup made from granulated sugar.

I only used 4 colours, sky blue, cherry red, coal black, and white. To make TARDIS blue, I mixed sky blue and a little bit of coal black and for the window I used fondant and a little bit of white food colouring. It was quite hard to get the right colour for TARDIS, so make sure you don’t put too much black.

Beef Tongue in Dark Soy Sauce Recipe [Gyuutan in Dark Soy Sauce]

This is a very simple and easy dish to make.

You only need :

  1. Beef Tongue
  2. Onions
  3. Dark Soy Sauce
  4. Salt and Pepper
  5. Margarine
  6. Oil
  7. Water
  8. Cornstarch
  9. Leeks (for garnish)

And you only have  to : 

  1. Put the tongue into a pressure cooker and boil it for ± 20 minutes
  2. Peel the outer skin and slice the tongue
  3. Cut the onion and then slice it
  4. Prepare your pan and add 2 tbsp of oil and 1 tbsp of margarine
  5. Saute the onion and put the sliced tongue into the pan
  6. Mix it well and add dark soy sauce.
  7. Add 1 cup of water, add salt and pepper, and let it boil
  8. After it boiled, add the cornstarch (you must mix 1 tbsp of cornstarch with water)
  9. Taste it. if it isn’t sweet enough, you can add more dark soy sauce.
  10. Place it on a plate and garnish it with leeks

Tasty Homemade Oyakodon Recipe

Oyakodon literally means “parent and child donburi” because Oyako means parent and child and don comes from donburi which means a bowl. Parent and child and on top of that, a bowl? Yes, because they served chicken and eggs in a bowl (do you get it now?). Well, the one I made this morning maybe not the authentic recipe but I’m 100% sure that this oyako donburi that I made is extremely delicious and easy to make.

You only need

  1. Chicken breast (you can use chicken thigh if you want because it actually depends on your own preferences)
  2. Ginger
  3. Garlic cloves
  4. Onion
  5. Shouyu (Japanese Soy Sauce)
  6. Mirin
  7. Eggs
  8. Salt and Pepper
  9. Oil
  10. Leek
  11. a bowl of hot rice
Here’s what you have to do :
  1. You have to marinate the chicken first. Cut the chicken into bite size pieces and put the into a bowl
  2. Grate ginger and garlic and mix it with the chicken. it’s enough if you use 2 garlic cloves for 3 chicken breasts. For the ginger, just smell it. if your chicken already has the smell of ginger, then it’s enough.
  3. Pour ± 4 tbsp of soy sauce and ± 3 tbsp of mirin into the chicken. Don’t forget to add a pinch of salt and pepper
  4. marinate it for half an hour
  5. Cut and slice the onion
  6. For the sauce, just add 2 tbsp of soy sauce and 2 tbsp of mirin into a small bowl
  7. Add 1 tbsp of sugar into the sauce
  8. Prepare another bowl and mix  1 tbsp of cornstarch and water
  9. When the chicken is ready, pour oil into the pan and saute the onion.
  10. Add the marinated chicken into the pan and saute them until the chicken is cooked.
  11. After you sure that the chicken is cooked, pour the sauce into the pan and mix the thoroughly.
  12. Add pepper again if you want to
  13. add 1/2 cup of water and let it boil first
  14. Add the cornstarch and mix it again
  15. The important step is you have to taste it. if it is too salty, you can add a little amount of water, 1 tbsp mirin and a pinch of sugar.
  16. Just taste it again.
  17. For the eggs, just make the usual scramble eggs

You can serve it like this (without a rice) and add sliced leeks on top of it

or you can make the oyakodon. Just put rice in a bowl and add the scramble eggs and the chicken. Don’t forget to add the leeks!

The important thing is, you just have to taste it and taste it again.
